Mmmm. Potluck.

As I mentioned yesterday I’m attending a good old fashioned potluck dinner tonight. I was going to make lasagna as one helpful reader mentioned, but I was looking for something extra special. I figured if dinner is good, maybe I can convince my friends to “eat-in” more often. I searched the internet and found a good-ole Rachael Ray recipe. To see the recipe click here. I made everything in advance last night, and if you like spinach and mushrooms I have to say this dish is pretty tasty. It requires Gorgonzola cheese which is a little pricey, but definitely worth the cost.

If you have any favorite potluck recipes could you post them or send their corresponding links. I’m planning on proposing a pot-luck once a month, instead of dinner out, and I’d like to come armed with a bunch of recipes.
