					<description><![CDATA[meatballs made with ground lean beef or ground turkey - I also add some breadcrumbs for DD&#039;s meatballs and almond flour for mine. Also thinky shredded zucchini. that&#039;s the only way she&#039;ll eat zucchini so I add that, and i find that it makes ematballs moist. 

fish patties / croquettes - made from tinned wild salmon is yumm! I also bake salmon fillets... 

I will give that pepper stuffed with minced emat a try!]]></description>

					<description><![CDATA[I like the lentil &#038; rice casserole recipe from the Tightwad Gazette by Amy Dacyzyn. We use it to make easy burritos - just add sour cream &#038; salsa and wrap it up into a tortilla. Delish! Here&#039;s the recipe: 
3 cups of broth - chicken or vegetable
 1/2 cup of brown rice, uncooked
 3/4 cup of lentils, uncooked
 3/4 cup chopped onion
 1/2 teaspoon basil
 1/4 teaspoon thyme
 1/4 teaspoon oregano
 1/4 teaspoon garlic powder
 
Mix all ingredients in a casserole dish. Bake covered @ 300 degrees F for an hour and a half. If you want, add shredded cheese the last 20 minutes of baking.]]></description>

					<description><![CDATA[We eat lots of fish. the ruffy at trader joe&#039;s has a good flavor that ALMOST tastes like chicken! as in, it doesnt have that fishy smell or taste. 

i also buy salmon burgers from costco in the freezer section that are SO yummy. 

oh and i substitute ground turkey for beef like 99% of the time. you can&#039;t even tell the different. i make ground turkey meat spaghettie, lasagna...i make stuffed bell peppers with ground turkey, chopped carrots, spinach, mushrooms and some soyaki sauce! delish and carb free!]]></description>

					<description><![CDATA[I don&#039;t know if he would be willing to try tofu but I make something called Terry&#039;s takeout Tofu a lot:

Stir fry mushrooms and greens (spinach, chard, etc) in oil and garlic. Set aside.

Heat up 1tsp soy sauce, 1 tsp water
Put 1/2 inch slices of tofu in pan.
Place sliced cheese on top
Cook until cheese is melted
Put on bread and top with greens

I sometimes leave off the greens for the baby&#039;s dish (hard to chew) but leave the mushrooms.

Tofu + cheese is the only way my sister will eat it.]]></description>
